Paul R. Katuszonek is remembered as a hero to many people for many reasons.  He bravely served his community as a police officer, earning him the nickname, “Night Hawk.”  Paul never missed an opportunity to dance or to share a laugh with family and friends.  NightHawk Rye Bourbon Whisky was crafted to embody the warmth and spice of its namesake and is best enjoyed with good company.  Our NightHawk Rye brings the characteristic warmth and spice of rye to a fairly traditional bourbon recipe with strong notes of caramel and vanilla, culminating in a clean, dry finish.  We proudly use 100% California-grown grain in this bourbon recipe, including Modesto-grown Merced Rye.

CHERRY WOOD SMOKED WHISKY

Single Malt Whisky is widely associated with a long tradition of quality.  We decided to put a uniquely American spin on single malt whisky by utilizing cherrywood-smoked malted barley.  Our award-winning Cherrywood Smoked Single Malt Whisky has a burnished golden color, a subtly smoky aroma with balanced sweet and savory flavors.  This whisky is perfect to enjoy neat, but it also adds interest to a Manhattans or other classic whisky cocktails.

PEAT SMOKED WHISKY

Peat Smoked Whisky has been a crowd favorite for centuries.  We convinced our peated whisky-making counterparts to share some of their malt with us so that we could create our own California crafted peat-smoked whisky.  This whisky starts its aging process in used rye whisky casks and is finished in our own 3 Mile rum barrels.  We present our own version of “Uische Beatha!” Our Peat Smoked Whisky has a refined taste with bright aromas of rich peaty earth and a subtle smoky nose.   As our friends across the pond say, “Today’s rain is tomorrow’s whisky.”  Our Peat-Smoked Whisky is best enjoyed neat, in a kilt; pet unicorn optional.

Our California whiskey meets classic German beer. Rich aromas of smoky wood cooking fires blend sweet malty hints with a warmth that fades to layers of smooth flavor. Beechwood smoked malt, deep gold highlights and a burnt amber color pair notes reminiscent of savory meats and lightly charred wood from the barrel aging process. NEW - D.G.D HOP FLAVERED WHISKY

 Our hop-flavored whisky is a premium single malt whisky, infused with hoppy goodness in the fashion of west coast IPAs! A sweet malt backbone with toasted caramel and light oak flavors from time aged in new barrels, this whisky gets pounds of hops added in during the brewing process to give the floral & piney nuances that make this spirit like drinking "hop candy”.

3 MILE RUM

Layered with notes of butterscotch, caramel and hints of cinnamon. The rum mingles with used bourbon barrels for a minimum of seven months when it's transferred to used Cabernet barrels adding a deep complexity of flavors.

Prohibition era California was a host to a thriving boot leg liquor industry. Just three miles off the coast of California international waters served as a staging area for bootleggers' massive ships carrying untaxed rum. The illegal liquor would then be loaded onto small boats fast enough to outrun the Navy by getting to shore with their illegal cargo. We captured that adventurous bootlegging spirit in our barrel aged rum; legally, this time.

WHITE RUM

Made from 100% evaporated cane juice sourced from the island of Mauritius. Mimicking the style of Rhum Agricole, big earthy and ripened tropical fruit aromas emerge, ending with a quick and dry finish. Taking us back to the traditions of the West Indies, all flavors and aromas rely exclusively on the raw sugar and yeast strains, completely absent of added sugar or flavor compounds. We never charcoal filter, chill filter or use fining agents to create more neutral tasting spirits. We believe in tradition from start to finish which gives this spirit a unique and desirable taste.

Do Good Distillery takes a contemporary-style approach to our juniper-forward and citrus rich Gin. Do Good’s award-winning White Rum serves as the base alcohol, which is then distilled a third time using essential ingredients such as Italian Juniper Berries, California citrus and key botanicals. Unlike the common practice of outsourcing neutral grain spirits as the base, our unique process adds layers of flavor. Each piece of our Gin recipe is distilled separately and then blended back together after distillation is complete- creating balance and perfection.
